There is something deeply comforting about a pot of curry on the stove. The aroma, the warmth, the feeling of home.

But cooking a traditional Durban curry can sometimes feel overwhelming. Too many spice jars. Too much guesswork. Too many steps to remember.

I wanted to change that.

I wanted to make cooking easier, without needing multiple spice jars, without the guesswork, and without taking away from the authentic flavour we all love.

So I created Perima’s Kitchen All In One Masala. A carefully balanced blend that brings flavour, depth and consistency to your pot with just one masala.

From that came a simple way of cooking that works every time.

 

The 1 2 3 Spice Method for Durban Curry

Step 1:
Heat oil and add your onions. Let them cook until soft and translucent.

*Optional: Add ginger and garlic. Add green chilli for more heat if you like, and fresh curry leaves.

Lower the heat, then add Perima’s Kitchen All In One Masala and allow it to bloom gently in the oil.

This is where the foundation of your curry begins. The masala already contains a balanced blend, including ginger and garlic, so even with simple steps, the flavour develops beautifully.

 

Step 2:
Add your tomatoes, grated, liquidised or diced.

Add a small pinch of sugar to balance the acidity and cook until a rich, well developed curry base forms.

Then add your meat of choice and salt to taste.

This step builds body and richness into the curry.

 

Step 3:
Add your potatoes.

Once the curry is halfway cooked, add boiling water and allow everything to simmer until the meat is tender and the gravy is rich and full of flavour.

Finish with freshly chopped coriander.

This is where everything comes together into a complete, comforting Durban curry.

 

Serving Suggestion:

Use 3 to 4 tablespoons of masala for every 1 kilogram of meat. Adjust according to your preferred flavour intensity.
